A proper Swiss fondue is heart warming and an essential comfort food for all cheese lovers. This particular cheese mix is grated fresh in our local kitchen premises from 2 equal parts Gruyère AOP Réserve and Vacherin Fribourgeois AOP. This mix is also known as ‘moitié/moitié’, or half/half in English.
Like a perfect Manhattan, this mix is simply the perfect combination of cheese. The Gruyère AOP Réserve comes from 10+ months with a lovely salty base and the typical medium strength Gruyère aroma whereas the Vacherin Fribourgeois AOP brings a mild creaminess to the mix. Together they are simply divine.
This pack comes in a vacuum bag of 500g net, perfect for 2 to 3 people. Best before date will be a minimum of 3 weeks, can be frozen for up to 6 months.
All you need is to add white wine (best is a Chasselat grape, but that’s hard to find, so choose another dry yet aromatic white wine, e.g. a Pinot Gris from Tasmania and corn starch. The full recipe can be found here.
How the cheese gets to you
All Alpine Express cheese are shipped in environmentally friendlier, insulated cardboard boxes. The cheese is bolstered with recycled packing paper & kept cold with food grade ice gel pack(s). It is shipped the fastest possible service, usually Australia Post Express. See Australia Post’s Express Delivery Estimator (origin is ‘Brisbane Metro’). From time to time we may choose a different shipping provider depending on speed of service, costs and other factors.
Unless noted otherwise, all cheese boxes are sent on Mondays with an order cut-off time at 9am (Sydney time) that day. You will get a tracking number to follow your parcel’s progress.
