Fan of raw milk cheese? Then this unique box is for you. It consists of 100% cheese from untreated, unpasteurised milk, meaning all the good bacteria from the beautiful white source stays in the actual cheese.

- Die Wilde Hilde, raw cow’s milk, ca. 200g
Die Wilde Hilde or in English ‘the wilde Hilde’ is probably named after a lovely cow called Hilde that wasn’t always behaving that well. Wilde she may have been, but rest assured the milk she gave past superb. This cheese is made in the village of Waengi, in eastern Switzerland. Waengi is not far from the cities of Winterthur, Frauenfeld and Wil, but is, nevertheless, in a typical countryside setting. It’s about 6 months matured and boast mild to medium meaty flavours with a very creamy and smooth paste and a long, slightly sweet finish, typical for raw milk cheeses from Switzerland.
- Swiss Gruyère AOP Reserve, 10+ months matured, raw cow’s milk, ca. 200g
Matured for a minimum of 10 months, Gruyère AOP Réserve boasts a full-bodied and fruity flavour. Light yellow in colour, it is stronger than a younger Gruyère AOP. It has a firm, slightly crumbly texture and a flavour that lingers in the mouth.
- Roquefort, raw sheep’s milk, 100g
This is the only soft raw milk cheese we can legally consume in Australia. Whilst this is sad, this particular cheese is sensational and will certainly hit the spot for every blue cheese fan. If you’re new to blue cheese, try this one with the accompanying honey. Simply drizzle a little bit onto the cheese and – boom – the flavour profile totally changes!

How we wrap your cheese
Freshness of your cheese is important to us. That’s why – unless noted differently in the description – we package all of our cheese in vacuum bags to help minimize travel impacts. However, we understand that some of you prefer cheese being wrapped in cheese wrap. This option is available to you for a small fee (it takes more time to package the cheese this way, that’s why we charge you a little bit more). Unless specifically noted in the description, all cheese will generally have a best before date of at least 14 days, vacuum packed cheese generally about 2 months. Please note that with cheese this is often only a guidance date and does not necessarily mean the cheese will be of lesser quality beyond that date. In fact many soft(er) cheeses are best kept close to or until after that date for maximum ripeness.
How the cheese gets to you
All Alpine Express cheese are shipped in environmentally friendlier, insulated cardboard boxes. The cheese is bolstered with recycled packing paper & kept cold with an food grade ice gel pack. It is shipped via Australia Post’s Express Post service. Please check if your delivery postcode is part of it, or see Australia Post’s Express Delivery Estimator (origin is Brisbane Metro) . Customers residing in the Brisbane Metro area can also arrange a free pick-up from our prep kitchen at The Small Crop, Wynnum.
Unless noted otherwise, all Cheese Boxes are sent on Wednesdays with an order cut-off time at midnight the Sunday before. Any orders of cheese boxes received after this deadline will be shipped the following week. All customers will get a tracking number to follow their parcel’s progress.
