Selected by Rolf Beeler, produced by legendary cheesemaker Willi Schmid. The Jersey Blue is Willi Schmid’s most decorated product: On two consecutive occasions, in 2010 and 2012, it won the “Best of Show” at the “World’s Jersey Cheese Awards”. The Jersey Blue undoubtedly proves the immense talent of its creator. Willi uses two different Italian moulds. He doesn’t reveal which ones, we only know Gorgonzola mould is not part of it. Natural calf rennet is used.
The Jersey Blue is specially appealing cut when you see the fine light blue to dark green veins that grow into the core from the outside. The buttery feel of the Jersey milk coats the palate and then the powerful flavours of the mould burst out. It has an unbelievable long finish, a masterpiece indeed.
The Jersey Blue can be enjoyed young but ages well. When it starts to dry out the flavours get sharper.
Tip: Try it with our Birehong Pear Reduction – devine!
Note: If you choose ‘1.5 kg’ as size you will be sent a full wheel. This cheese looks spectacular on any cheese board but it looks even better in a full wheel!
This cheese will be wrapped in aluminium foil to guarantee maximum freshness. Best before will be 21 days from date of packaging.
How we wrap your cheese
Freshness of your cheese is important to us. That’s why – unless noted differently in the description – we package all of our cheese in vacuum bags to help minimize travel impacts. However, we understand that some of you prefer cheese being wrapped in cheese wrap. This option is available to you for a small fee (it takes more time to package the cheese this way, that’s why we charge you a little bit more). Unless specifically noted in the description, all cheese will generally have a best before date of at least 14 days, vacuum packed cheese generally about 2 months. Please note that with cheese this is often only a guidance date and does not necessarily mean the cheese will be of lesser quality beyond that date. In fact many soft(er) cheeses are best kept close to or until after that date for maximum ripeness.
How the cheese gets to you
All Alpine Express cheese are shipped in environmentally friendlier, insulated cardboard boxes. The cheese is bolstered with recycled packing paper & kept cold with an food grade ice gel pack. It is shipped via Australia Post’s Express Post service. Please check if your delivery postcode is part of it, or see Australia Post’s Express Delivery Estimator (origin is ‘Brisbane Metro’). Note: local pick-ups or Brisbane Metro Courier services are no longer offered.
Unless noted otherwise, all Cheese Boxes are sent on Mondays with an order cut-off time at 9am (Sydney time) that day. You will get a tracking number to follow your parcel’s progress.
Due to COVID-19 anticipated delays with Australia Post we will pack all deliveries with extra ice packs and insulation. To cover these costs we will have to add a $5 fee for orders under $100. This fee will appear during check-out. Thank you for understanding.
